A Delicious Twice Baked Potato Casserole DIY

A twice baked potato in the form of a casserole is a terrific DIY recipe.  It can be served as a side or a main dish.  This recipe is perfect for that next gathering that you will be attending.  If you like more toppings either add them or serve on the side.  Thanks to Taste of Home for the recipe.

Ingredients

  • 1-1/2 pounds red potatoes (about 6 medium), baked

  • 1/4 teaspoon salt

  • 1/4 teaspoon pepper

  • 1 pound sliced bacon, cooked and crumbled

  • 3 cups (24 ounces) sour cream

  • 2 cups (8 ounces) shredded mozzarella cheese

  • 2 cups (8 ounces) shredded cheddar cheese

  • 2 green onions, sliced
